How to Make Jamaican Hard Dough Bread.

As I said in my last post A Journey to Self Love, I want to get healthy. A big part of that is knowing what you are putting into your body. The average loaf of bread has about 16 ingredients and half of which I don’t know. So I began to research how to make my own bread.

Why did I choose Jamaican Hard Dough Bread you ask. Well my husband and step kids love it. It also costs an arm and a leg here in Canada around 4 or 5 dollars for one loaf. Let’s say on average we go through 3 loaves a week your looking at 15 dollars just for bread. When I punched out the numbers 1 loaf of the homemade version cost 83 cents.

Yes it takes more time out of your day to make but firstly I know what’s in it. I know what my family and I are consuming. Secondly it’s cost efficient the yearly average cost of store bought would be $780. Whereas our at home version is  $129.48 that is $650.52 I have saved just from making my own bread.

Onto the recipe.

3 1/4 Cups of All Purpose Flour

2 Tsp of Instant Dry Yeast

2 Tbsp of Sugar

1 1/2 Tsp of Salt

3 Tbsp of Margarine of Butter

1 Cup of Cold Water

1.)  Mix flour, yeast, sugar, and salt together in a large bowl.

2.) Mix in the margarine till you get a pebble like consistency.

3.) Slowly add the cold water and mix thoroughly.

4.) Lightly flour you counter top and begin to knead you dough. (I knead for about 5 – 1o minutes till it has an elastic like texture.)

5.) Grease a large bowl and place your dough in it.

6.) Rotate the dough till all the surfaces have been greased.

7.) Cover the bowl with a towel and leave in a draft free area for 45 minutes.

8.) Punch down the dough to release any carbon dioxide that may have formed.

9.) Shape or braid the dough and place in a bread pan.

10.) Preheat the oven to 350 fahrenheit.

11.)Allow to proof for another 35 minutes. This is known as the second rise this is what gives the bread its flavour.

12.) Brush with egg wash.

13.) Place bread in the oven and allow to bake for 35 minutes.

14.) Remove from oven and allow to cool for at least 10 minutes before you cut into it.

I know I have been absent from bloging for awhile but I have been taking time to get back into a routine of being back at work. I promise i will blog more in the up coming months I have really missed it to be honest. Its good to be back.

I have been “plus sized” for the majority of my life. I have always been overweight. It has taken me a very long time to feel confident in the skin I was given. I am finally at a point in my life where I can confidently say “this is me, either love me for who I am or theres the door”. 

Body shaming is such a huge issue with media and social media. It is something that needs to change. We all are different and we are beautiful in our own way. In order someone to love you need to learn how to love yourself first.

Learning to love myself has been one of my greatest challenges. It has taken a very long time and everyday I still work on it. I am a work in progress and that is OKAY!

There is so much emphasis on women’s weight and looks. It is sad that is where society is today. The emphasis should education and what good someone is doing in this world.

Now that I have a daughter I want her to know that she is sooooo much more than the number on the scale. I want her to be confident in who she is and not put someone else because they are different.

We all need to treat people how we want to be treated. We are all equal. (but Drake likes his girls BBW LOL!) Whether your 105 lbs or 300 lbs you are gorgeous and you can do anything that you put your mind towards.

3 Spring Outfits ft Forever21+

I love spring, lets be honest who doesn’t. Here are 3 of my favourite spring time outfits.

For those cooler spring days I would usually wear something like this:

All from Forever 21+. I love basics, I love that you can either dress them up of down. This is definitely a go to outfit for me. The cardigan fits like a dream and can be worn in multiple seasons.

I love this for the warm days.

Also all from Forever21+. I love Forever21 because they have on trend clothes that are affordable for us plus size girls. I have to say that the quality has improved immensely over the last couple years. Honestly there should be WAY more plus size options targeted for a younger crowd. Ok enough of that little rant and on to my outfit. I absolutely adore this top, it is the perfect cut for my body type, the way it flows it very flattering. It is probably one of my favourite recent purchases.

For those hot days this is a go to!

To be honest I was very on the fence about these shorts, after I tried them on I fell in love. They fit great, they’re comfy and stylish, you can’t go wrong. I have this tank top in numerous colours. It is defiantly an item that you can dress up or down. Each season Forever21+ comes out with new colours of this tank tops and I usually pick up a couple. I love the cut and fabric it is a great go to for any season.

Jamaica, Jamaica! 10 things I want to do when I go to Jamaica.


I am going to Jamaica for two months this summer to see C! I have never been to a Caribbean island, words cannot describe how excited I am. Here is a list of 10 things I want to do on my trip!

1.) Hike Blue Mountain, supposedly you start the hike at 2 am so you reach the peak at sunrise, I assume the view is to die for.

2.) Fire Hole in St.Ann. Swim in water that can catch fire! Lets be real here how awesome is that!!!!

3.) Visit the Bob Marley Museum. You can’t come to Jamaica and not visit!

4.) Zip Lining!!! Its on my bucket list!!

5.) Dunn’s River Falls. It is considered one of Jamaica national treasures, it is truly beautiful!!

6.) Bobsledding in the rainforest. WHERE ELSE COULD DO THAT!!!!!

7.) Visit Negril. A seven mile white sand beach. Lord have mercy!

8.) Visit plenty of markets. That was one of my favorite things to do when I visited Guatemala.

9.) Eat fresh Quenepas (Genipe) one of my favorite tropical fruits.

10.) Dolphin Cove! I’ve always wanted to swim with dolphins!!

As you can see I am so excited that I am already planning for my trip. If you have any recommendations let me know!

Recipe ~ my take on Sheppard’s pie.

Hey all In our household, it is hard to find something that we all enjoy eating. Sheppard’s pie is one of the safest things for me to cook that know everyone will eat. But it is not your traditional Sheppard’s pie, I put my own lil’ twist in it.

First peel and cut up your potatoes. I do like 6 or 7 BIG potatoes! Because I do two layers of potatoes in the pie. Yes we like our potatoes.


Add your water and let your potatoes cook.


After the potatoes are cooked and drained I season potatoes with these two seasonings. I don’t use specific measurements I just season to taste .

Almost everything that I cook I use these two seasoning blends. Now add a bit of butter and some milk and mash away till it looks something like this.


I use a glass pyrex pan a spread a bottom layer of potato.


Now to cook the meat veggies filling. I heat up my pan put approx a tbsp of canola oil, a chopped up onion, red pepper and a tbsp of minced garlic and let that sweat out.


Once the onions are translucent add in your meat and season with the two seasonings above so that there is a consistent flavor

_DSC0430We use ground chicken but you could use ground beef.

I now add corn and peas for some added veggies!


Let that cook till the chicken is thoroughly cooked.

Then spread on top of the first potato layer.


I then add the final layer of potatoes.


I then let it cool and stick in the fridge till I am ready to stick it in the oven. When its time to stick it in the oven, I preheat the oven to 350 Fahrenheit. Once the oven is hot I put the pie in and let it cook for about 30 minutes or till the top is a nice golden brown. Let it cool for about 10 minutes than serve it for dinner. There are so many different ways you could change up this recipe.  Play around, enjoy cooking and find the right one for you.

Gluten Free Banana Bread.

I love to bake. I love the aroma that freshly baked anything leaves in the house especially in the winter. My mom a couple of years go found out that she is gluten intolerant. One of her favorite treats used to be banana bread. So I like a challenge and gluten free baking can’t be that different right…I changed up a few thing in a recipe that I found and came up with this. I plan on experimenting more with gluten free baking. Its so much better fresh than the store bought gluten free baked goods. May I note that my very picky husband loved the banana  bread and it was gone in a couple days. 🙂

Preheat the oven to 350

  • 3 ripe bananas (I personally like to use REALLY ripe bananas for added sweetness)
  • 1/2 tsp vanilla extract
  • 1 egg
  •  3 tbsp coconut oil (I have also used olive oil and it turned out just as good)
  • 1/4 cup  sugar
  • 1/4 cup packed brown sugar
  • 2-3tbsp honey, depending on ripeness
  • 3.5 tsp baking powder
  • 3/4 tsp sea salt
  • 1/2 tsp ground cinnamon
  • 3/4 cup of milk
  • 1 1/4 cup almond meal
  •  3/4  cup of almond flour
  • 1/2 cup of rice flour
  • 1/4 cup of gluten free oats

Mix wet  ingredients in a large bowl. Mix dry ingredients in a medium sized bowl. Mix the dry into the wet ingredients. I added in chocolate chips because what good is banana bread without chocolate…honestly lol. Pour into greased loaf pan. I added walnuts and shredded coconut on top. Bake for an hour or so and then let it cool completely or else it will fall apart. I know its tempting to dig right in but trust me it is so worth the wait. Then Enjoy!!
